Carrot Apple Salad
You can add more raisins, add walnuts, change the proportions of juice to honey to suit your taste and you will still have a crunchy, tasty salad. If you're used to Waldorf salad, you might miss the mayonnaise, though.

Ingredients
- 1 ⁄4 cup fresh lemon or lime juice
- 2 Tbs fresh orange juice
- 1 Tbs honey
- 2 cups apple, shredded
- 2 cups carrots, shredded
- 1 Tbs fresh mint or 1 tsp dried mint
- 1 ⁄8 tsp salt or to taste
- 1 ⁄4 cup raisins
Directions
Mix together the juice and the honey. Toss with the apples and coat well (prevents browning). Add the remaining ingredients. Toss well and serve immediately.
