Chenin Blanc, Gewurtztraminer, Chardonnay

Ingredients

  • ½ medium onion, Vidalia or other sweet onion, thinly sliced
  • 4 medium slices sourdough bread
  • 1 small Granny Smith apple thinly sliced
  • 2 oz. Brie cheese, thinly sliced

Directions

Spray a large, nonstick skillet with cooking spray or melt butter. Place pan over medium-high heat and add onions. Saute until soft and golden brown.

Lay 2 slices of bread on a clean surface and divide apple slices, Brie and caramelized onions among them. Cover each with a second piece of bread. Butter upper sides.

Add more butter to pan and set sandwiches, buttered side down, over medium heat. Butter upper sides. Turn sandwich when bread browns (hold tight or they'll fall apart!).

Grill sandwiches until cheese melts and bread browns on both sides. Cut into halves and serve hot.
