Meat Loaf

This is my very own creation.  I can't call it a recipe because there are no amounts - just ingredients.  It's different every time!  Probably my only true moment of spontaneity.  Just be sure to get the best grade of beef, to reduce the fat content. Use the bread crumbs to reduce moisture.  Serve with mashed potatoes.

Ingredients

  • 1 lb. ground beef (get the lowest fat content you can find)
  • 1 egg
  • Juice of 1 lemon
  • Worcestershire sauce
  • Bread crumbs (Panko with seasoning is good)
  • Pepper
  • Salt
  • Sriracha
  • Grated cheddar cheese (on top - not mixed in)

Directions

Add all ingredients (except cheese) in a bowl and mix by hand. Transfer to shallow oven-proof container. Top with cheese. Bake, uncovered, at 400 degrees for 35 minutes or until completely cooked.

  1. This is kind of like mine. Bob called it Barbara's surprise because it is different every time. Looks yummy. I will try the Worcestershire next time.
