Baked Whole Sweet Potatoes

Easy!  You don't even have to bake it - just microwave it.  It took about 10 minutes (2 "potato" cycles).  No aluminum foil, no 1 1/2 hours in the oven.  Of course, you can go to more trouble if you want (see below)...

"Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus."

Ingredients

  • 2 sweet potatoes

Directions

Wash sweet potatoes, and remove any blemishes or dark spots; wrap each potato in aluminum foil. Bake, folded side of foil up, at 350° for 1 to 1 1/2 hours or until a fork easily presses into the center. If desired, serve with butter, pepper, and salt.
