Microwave Lemon Curd

"When friends give you lemons, make lemon curd."  Isn't that how it goes?

The dilemma with lemon curd is that it's really delicious but what do you put it on? It's too tart just to spread on toast. You really need some sort of shortbread or maybe a biscuit.  I guess it's best to use it in desserts.  I made lemon bars (recipe to follow).  I used 5 lemons for this recipe.

Anyway, I looked it up - you can freeze it for up to a year.  Maybe by then you'll find something to do with it.


Ingredients
1 cup white sugar
3 eggs
1 cup fresh lemon juice
3 lemons, zested
1/2 cup unsalted butter, melted

Directions
In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.
