Lemon Pepper Shrimp Scampi
Simple and delicious. Preparation consists of removing the shells from the shrimp and mincing the garlic. No sophisticated sauce - only lemon juice and butter. I love Soy Sauce, but didn't use it at all. Orzo holds the lemon flavor and is perfect with the shrimp. I used lemon pepper instead of ground pepper, added chopped fresh tomato and served it with Baked Whole Sweet Potatoes. Aim for "almost done," on the shrimp, as the recipe says.

Ingredients
- 4 ounces uncooked orzo
- 3 tablespoons unsalted butter, divided
- 1 fresh tomato, chopped
- 5-6 ounces peeled and deveined jumbo shrimp
- 2 teaspoons minced fresh garlic
- 2 tablespoons fresh lemon juice
- 1 teaspoon freshly ground black pepper or lemon pepper
Directions
1. Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl.
2. While orzo cooks, melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. Add shrimp to pan and sprinkle with pepper; sauté 2 minutes or until almost done. Transfer shrimp to a plate.
3. Melt remaining 1 tablespoon butter in pan. Add garlic and tomato to pan; cook 30 seconds, stirring constantly. Stir in shrimp and lemon juice; cook 1 minute or until shrimp are done.
4. Serve over a bed of orzo.
